I can't find any example of how to format numbers appearing in summaries. Big numbers are very hard to read without thousands separators. Can anyone help me? Thanks in advance

You should be able to achieve this with the use of the igGrid's Custom Summaries feature. To learn more about this feature, please review the following links:

I recommend using the SummaryCalculator option to create your own custom summary function that outputs a number that is easier to read.
