I need to set the time display style of the UltraDayView control to a 24 hour time format; however I can not find where I would set this.

Yes, it is possible. You could override only in this form your currentCulture settings. For example:
Option 1: to override only the time settings:
CultureInfo culture = (CultureInfo)CultureInfo.CurrentCulture.Clone();
culture.DateTimeFormat.FullDateTimePattern ="HH:mm:ss";
Thread.CurrentThread.CurrentCulture = culture;
Option 2: to override whole culture settings:
CultureInfo ci = new CultureInfo("en-GB", true);
Thread.CurrentThread.CurrentCulture = ci;

By default the time format in our UltraDayView control depend of your TimeFormat settings of your OS. Please take a look at the attached video file for more details.
