I dont know how to deactivate "add or remove buttons" in my toolbar

    I believe the only way to hide this button is to set Settings.AllowCustomize to False on the toolbar. Or you can hide this button for all toolbars by setting UltraToolbarsManager.ToolbarSettings.AllowCustomize to False.
