Hi,
I am dropping controls into a cell template to use different datatypes for different rows. The problem I am having is that when I update the control, the grid does not recognize it as information in the cell changing.

The first column is the name, the second column is the value and the third column is what I'm wanting to achieve.

It looks like you want to place different controls in different rows. This functionality can be achieved by adding the controls dynamically. Please follow the link below from our KB Article, which shows how to do this with step by step example and has a sample attached to it. I would recommend downloading the sample and testing it.
